Start Menu "All programs" overload

I have so many apps., etc., in my "All programs"
that they disappear over the top right-hand corner of the screen!
I think there is a method of placing all relevent apps. in a single folder, such as games, docs etc. There is, for example, several different applications for my Epson software, printer, scanner, CD printer all taking up separate lines. Can these safely be places in a single folder?
If so, can you explain hoe, please?

Right click the Start button > Explore all users. If necessary click the + to the left of Programs to expand the list. Right click > New > Folder. Rename New Folder to Games. Drag and drop your games into it. Repeat for the other categories.
