Security during remote access

Depending on the software used, I've read that data is not encrypted during a remote access session. In general, I've heard that data sent over the Internet unencrypted can be read. Conceptually speaking, how does a person do that? I'm concerned because I'm using an unencrypted program, and I want to know the likelihood of my personal data being captured.

and in order to answer your question I need mor information - what software are you using for your remote sessions, and in what context - what are you using the remote access for?

I am using RealVNC to simply access my home network remotely. I'm not looking for details how to capture unencrypted data over the web, but I am generally curious how difficult it would be to do that and how likely someone would want to capture my data. Thanks.
