I know i'm going to sound like I am winding you up but can anyone tell me what NVIDIA does?
I have just seen an icon for it on my computer (only had it a few weeks).
I've no idea what this is for or what it does??

nvidia is the name of a company that makes graphics chips for graphics cards and motherboards, and also chipsets for use with motherboards.

So the icon is something to do with software for either a graphics card or a motherboard.

It's difficult to be more precise - what is the name of the program that the icon causes to run?

It is an icon in the bottom right of the screen wihere the volume icon is and when I click it ,it gives me a lot of other options that I can do ie colour quality,performance and quality settings,refresh rate

It says NVIDIA corporation copyright 1998-2003

It's the control for the graphics chip of the parameters you mention.

It's pretty normal to have one with an nvidia chip. I've got one.
