I've just set up in Publisher a letterhead. How do I make it a MS Word doc. to use when writing a letter?

You simply select 'save as'from the 'File' menu, and look for the relevant version of Word.doc for your installed version of Word in the 'save as type' drop down menu.
Once you've opened the document in Word you can choose to save it as a template in the normal way. Select 'save as' from the file menu and then select 'Word template' from the drop down menu.
