iTunes and iPod Touch

Hi - I've got my Ipod Touch in a total mess and want to delete all the music and basically start again.

According to the Google answers, I should be able to click on My iPod, select Music, select the contents and then Edit>Delete. However, Delete is greyed out. I can't right click and delete, there's nothing in the Library and the songs shown on the C Drive in My Music aren't necessarily the ones on the Touch. Other answers say you can't delete directly from the iPod but instead have to delete the Library.

I've got it set to manually synch, and some time ago I managed to clear everything off completely - unfortunately at that time, I didn't want to!

Any suggestions, please? I'm obviously missing something so basic.
