How do I replace a raid drive?

I have a PC with 2 x 60GB hard disks set up in Raid so that the disks mirror each other. One disk has failed so I want to take the opportunity of replacing both disks with 2 x 250GB disks, again setup to mirror.
My question is, can I install 1 x 250GB and let the working disk mirror to that, then mount the 250GB as the boot disk, remove the 60Gb and install the second 250GB and let it mirror. Is it as easy as that?
