Need advice on my first (gaming) PC build

I am planning to build my first PC and i would really like some thoughts and advice on the parts that i chose. My budget is around €1800 (Belgium).

This PC will primarily be for gaming, i play a big variety of games and i'd like to play all the latest games at max settings. I will probably also do a lot of other things on this PC. For now i play at 1080p but i will go higher later. I'm also planning to do some over clocking in the future.

I do not need a monitor, keyboard, mouse or operating system.

I'm having having a hard time choosing some of the components. I've made a selection (indicated with "/") but i'm not sure which one to pick, i would really appreciate some help with this (CPU cooler, motherboard, PSU, case, HDD). Overall are they good parts? Is one better than the other? Big differences or barely noticeable? Which one should i pick?

About the motherboard: The msi gaming m3 doesn't have SLI. I would've liked SLI in case i buy a second graphics card in a few years, but if the msi gaming m3 is better i'm willing to give up SLI.

About the power supply: Do i need 600 or 650 Watt or more? Are the chosen power supplies good quality?

About the case: Do the Define R5 and Define S have the same cooling performances (air cooling)? Is one more silent than the other? Small or big difference?

Overall i would like a very well performing, silent PC with good airflow.

All advice is appreciated! The more the better! I am really looking forward to having this PC!
