To be able to help you better I would need to know the name of the applications as to which you intend to use. Not all applications use CUDA and some work far better using CPU.
You mention Quadro, this for me would be a better choice than a Titan. The Titan has needed stuff removed to make it more affordable for the gaming market. Quadro's will play games just like a Titan will do office work.
The new nVidia's are planned for 2016. If you google the roadmap, you will see they are keeping the 9 series and Titan for the next year.
You are correct as to CPU cores, though please do not forget that clock speed is also important. If you have basic overclocking skills you can increase your work speed.
