My 8800 gts 640mb seems to be sharing an additional 766mb of system RAM,Ive checked the BIOS but I cant find any way to disable it.

um, i don't think thats shared memory, but total available for the card.
your card has 640, plus the 128 meg apeture window.
are you looking at the used memory vs free memory?

- Dedicated system memory 0 MB means no RAM is reserved (i.e. you don't have
a graphics card integrated into the mother board).
- Shared system memory is 766 = 640 + AGP aperture size. Shared doesn't mean
used! Games will use this mem via AGP aperture size

If you're running a 32 bit OS with 4 GB of RAM and can only see 3.25GB that's a limitation you'll have to live with. click here

Its says total avalable graphics memory 1406mb
shared sysem memory 766mb
so its not actuallyt sharing any RAM? it just borrows it when needed?

whem the pc starts the bios checks the graphics card to see if it is ok and then adds the graphics card memory to the system memory.
