Simple Photo Imaging Software

I've been supplied with Kodak 'Easyshare' with my new digital camera. It seems to be able to do disappointingly little in the way of manipulating my pictures, but most vexingly of all, I find that after I have carefully labelled my photographs, all the text is lost when saving to a CD.

Can any lister please recommend software which isn't over-complicated for the cautious amateur and which will ensure all annotation of my pictures is preserved when transferred to CD?

Many thanks.
