would video and sound cards be classed as an interface card?

If they are in the PCI slots - yes.

Yes, sort of - but the term is more often applied to cards such as a SCSI card, or USB card, which has general purpose interface, rather than a graphics card which is only for a monitor.

The term interface simply means the join where two items connect.

If it's an important distinction for you, why not explain a bit further
