I would like to enter a formula to determine wether two cells exceed certain values and if they do then print a word in a third cell.
e.g. if cell e5 equals or is greater than 11 and f5 equals or is greater than 16 then print in cell g5 "PIN"

This would make life so much easier for me

You can't do this with Conditional Formatting (except by setting the font to white).

Try

=IF(AND(E5>=11,F5>=16),"PIN","")

I think you might have to have two separate IF functions, because if e5 is 11 and f5 is also 11 you would get an error.

Try this, in g5 enter =if(e5>=11,"PIN","")

and in h5 enter =if(f5>=16,"PIN","")

You will then have g5 relative to e5 and h5 relative f5
