Excel Formulas Tuition

Hi all,
I have been using excel sheet's now for many a year but on a more basic level, now I want to learn on how to do formulas. For 1 example I have 15 sheets on 1 opened book but 1 of the sheets is an overview of all the other 14 sheets, I simply want to enter data in each of the 14 sheets and it does an over all calculation into the overview sheet. So this is really a 2 Question thread.

Does anyone know of the best way to go about this?

I will also paste this into the more advanced Helproom as im not sure at what level it begins to be an Absolute beginners query.
