Excel 2003 Cell Defaults

Is it possible to set up the defaults settings for Excel 2003 cells? For example that cells in new workbooks are vertically centred and word wrapped. Or that text in new Workbooks is 12 point Aerial Bold.

Take a look at Tools > Options for changing the default font. I don't think that the rest of your wish list is possible.

You could set up a template book. Open up a new work book and set up your options then save as a workbook template. See the help files in excel for full details

set up a work book as you want it then save as a template. open your new workbook from this template.

Oh, yes, a template. Brain wasn't engaged.

If you name the template BOOK.XLS and store it in the XLSTART folder (look in Tools > Options to see where this is) then all new workbooks will use these settings.
