Bit Rate conversion

Ive got this software which is a movie dvd maker (just for converting to dvd files really). One thing is though when it comes to the settings I have no idea what they mean:(. The help guide doesnt explain very much at all so I was just wondering if anybody could let me know what these mean.
AUDIO:
Bit rate - Conversion bit rate from 128 to 640 kbps.
Gain what is the gain for.
VIDEO:
Bit rate - Conversion bit rate from 128 to 7500 kbps
Video standard - PAL/NTSC

See if this click here explains it for you. Basically the larger the bitrate the better the quality but the file sizes increase accordingly. CD quality audio is about 156kbps (I think) but 128kbps is perfectly acceptable, unless you're an audiophile.

PAL = UK Television format
NTSC = US Television format
