You can normally choose stereo or 2.1 as required through the onboard sound's configuration panel.

Or use Sounds and Audio Devices>Properties from Start>Settings>Control Panel.

its set to stereo at the moment just wondered about the right sort of system to crank it up a bit

I would personally advise a 5.1 or 7.1 sound system for the best sound effects but you may be happy enough with a 2.1 system.

A very good stereo/2.1 system is far better than a so-so (i.e. cheap) 5.1 or 7.1 speaker system - you also have the problem of housing all those speakers.

I agree entirely, as with any sound system it's quality that counts.

so a 2.1 system will work ok with my 7.1 card ? any recommendations on a good 2.1 ?

To answer your question loganly, you can use 2.1 and your wallet is the limit ;-)
Try not to think of your speakers by quantity but as a good match to your system. Expensive 2:1's will be wasted with a naff card, and the opposite is true. A good 7:1 card with good multiple speakers is a real pleasure for gaming and music provided you have the space. Think of your speakers in the interest of full design compatibility and not compromise.
click here and try to find something which compliments your card. Doesn't have to be this brand but it will give you some idea of what to expect for you money.
